Palak Paneer
Here's a recipe for Palak Paneer:
Ingredients:
- 200 grams paneer (Indian cottage cheese), cubed
- 300 grams fresh spinach (palak), washed and blanched
- 2 tablespoons ghee or oil
- 1 medium-sized onion, finely chopped
- 2 tomatoes, finely chopped
- 1 teaspoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon garam masala
- 1/2 cup fresh cream
- Salt to taste
- Water as needed
- 1 tablespoon kasuri methi (dried fenugreek leaves) (optional, for garnish)
Instructions:
1. In a pot of boiling water, blanch the spinach leaves for 2-3 minutes until they wilt. Drain and immediately transfer the spinach to a bowl of ice water to retain its green color. Drain again and blend the spinach into a smooth puree. Set aside.
2. Heat ghee or oil in a pan over medium heat. Add cumin seeds and let them splutter.
3. Add chopped onions and sauté until they turn golden brown.
4. Add ginger-garlic paste and sauté for another minute until the raw smell disappears.
5. Add chopped tomatoes and cook until they become soft and mushy.
6. Add turmeric powder, red chili powder, and garam masala. Mix well and cook for a few minutes to allow the flavors to meld together.
7. Add the spinach puree to the pan and mix well with the spices. Cook for 5-7 minutes, allowing the spinach to cook and the flavors to blend.
8. Add fresh cream and salt. Mix well and simmer for a few minutes until the gravy thickens slightly. If needed, add water to adjust the consistency.
9. In a separate pan, heat a little ghee or oil. Fry the paneer cubes until they turn golden brown on all sides. Remove from heat and drain on a kitchen towel to remove excess oil.
10. Add the fried paneer cubes to the spinach gravy and gently mix them in. Simmer for a couple of minutes to allow the paneer to absorb the flavors.
11. Optional: Crush kasuri methi between your palms and sprinkle it over the palak paneer for added flavor.
12. Serve hot with naan, roti, or rice.
