Dahi-Wade - Indian Appetizer

 

Here's a recipe for Dahi Vada, a popular Indian dish made with lentil fritters soaked in yogurt and topped with chutneys and spices:


Ingredients:

For the Vadas:

- 1 cup urad dal (skinned black gram)

- 2 tablespoons rice flour

- 1/2 inch piece of ginger, grated

- 2 green chilies, finely chopped

- Salt to taste

- Oil for deep frying


For the Yogurt:

- 2 cups yogurt (curd)

- 1/2 teaspoon roasted cumin powder

- Salt to taste

- Water (as needed to thin the yogurt)


For the Toppings:

- Green chutney (made with mint and coriander)

- Sweet tamarind chutney

- Roasted cumin powder

- Red chili powder

- Chopped coriander leaves


Instructions:

1. Soak the urad dal in water for about 4-5 hours or overnight. Drain the water.

2. Grind the soaked dal to a smooth paste, adding very little water if necessary. The batter should be thick.

3. Add rice flour, grated ginger, green chilies, and salt to the batter. Mix well.

4. Heat oil in a deep frying pan or kadai over medium heat.

5. Wet your hands and take a small portion of the batter. Shape it into a flat round vada and make a hole in the center.

6. Gently slide the vada into the hot oil and fry until golden brown and crispy. Repeat the process for the remaining batter.

7. Once fried, remove the vadas from the oil and drain on a paper towel to remove excess oil.

8. In a bowl, whisk the yogurt until smooth. Add salt and roasted cumin powder. Mix well. If the yogurt is too thick, add a little water to thin it out.

9. Soak the fried vadas in warm water for a few minutes until they become soft. Squeeze out the water gently and place the vadas in a serving dish.

10. Pour the prepared yogurt over the vadas, ensuring they are completely covered.

11. Drizzle some green chutney and sweet tamarind chutney over the yogurt.

12. Sprinkle roasted cumin powder and red chili powder on top.

13. Garnish with chopped coriander leaves.

14. Let the Dahi Vadas sit for a while to allow the flavors to meld together.

15. Serve chilled and enjoy!


Dahi Vadas are typically served as a snack or appetizer in India. They are best enjoyed chilled, especially during hot summer days.
