Chole-Batture-North Indian Dish
Here's a recipe for Chole Batture, a popular North Indian dish:
Ingredients for Chole (Chickpea Curry):
- 1 cup dried chickpeas (chole)
- 2 medium-sized onions, finely chopped
- 2 medium-sized tomatoes, pureed
- 2-3 green chilies, finely chopped
- 2 teaspoons ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1 teaspoon red chili powder (adjust to taste)
- Salt to taste
- Cooking oil
- Fresh coriander leaves for garnishing
Ingredients for Bhature (Fried Bread):
- 2 cups all-purpose flour (Maida)
- 1/4 cup semolina (sooji/Rava)
- 1/4 cup yogurt (curd)
- 1 teaspoon sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- Salt to taste
- Water (as needed)
- Cooking oil (for deep frying)
Instructions:
1. Chole Preparation:
- Rinse the dried chickpeas thoroughly and soak them in water overnight. Alternatively, you can use canned chickpeas and skip this step.
- In a pressure cooker, add the soaked chickpeas along with 4 cups of water and some salt. Pressure cook for about 15-20 minutes or until the chickpeas are soft and cooked.
- Heat oil in a pan. Add cumin seeds and let them splutter. Then, add the chopped onions and sauté until they turn golden brown.
- Add ginger-garlic paste and green chilies, and sauté for another minute.
- Add the tomato puree and cook until the oil separates from the mixture.
- Now, add turmeric powder, coriander powder, red chili powder, garam masala, and salt. Mix well and cook for a few minutes.
- Add the cooked chickpeas along with the water (adjust the consistency of the gravy as desired). Mix everything together and simmer for 10-15 minutes to let the flavors blend. Adjust the seasoning if needed.
- Garnish with freshly chopped coriander leaves. The chole is ready.
2. Bhature Preparation:
- In a mixing bowl, combine all-purpose flour, semolina, yogurt, sugar, baking powder, baking soda, and salt.
- Gradually add water and knead the mixture to form a soft and smooth dough. The dough should be slightly sticky but manageable. Add more water or flour if needed.
- Once the dough is ready, cover it with a damp cloth and let it rest for about 1-2 hours.
- After resting, divide the dough into small portions and roll each portion into a small circle or oval-shaped bhatura.
- Heat oil in a deep-frying pan or kadai. Fry the rolled bhaturas one at a time until they puff up and turn golden brown on both sides. Make sure to press the bhatura gently with a slotted spoon while frying to help it puff up.
- Remove the fried bhaturas from the oil and place them on a paper towel to drain excess oil.
Serve the hot and puffed bhaturas with the delicious chole. You can also serve them with pickles, onion slices, or a side of yogurt. Enjoy your homemade Chole Bhature!
